Gravity knives are pretty neat and also simple.
The only examples I am familiar with are the German Flieger-kappmesser. They were designed for paratroopers to quickly cut a parachute cord. They were used in World War II and beyond.
They are locking knives, not surprisingly powered by gravity. Basically the knife blade inside the handle has a guide piece that fits into a slot. You unlock the knife and the blade can slide in and out of the handle depending on whether you point it up or down. You can also flick your wrist to extend the blade.
