Great Slab Bacon, Pancakes, and Hot Cranberry Syrup!!!!

Anyone here besides me that loves Cranberries? ;)
I get tired of eating the same, ol, same ol, things every day and like a break once in a while.
Barb asked what I wanted for super last night and I told her Bacon and Pancakes, she said, "With your Cranberry syrup?" and of course the answer was yes.
Barb cooked 'em up and they were Absolutely Wonderful!!!!:thumbup: :cool: :D
Barb cans up several pints of cranberries when they're in season during Thanksgiving and Christmas. You can use the canned whole berry Cranberry Sauce that you can buy at the supermarket if you don't have fresh or home canned.

For one person and about three pancakes.YMMV ;)

I can or pint of Cranberries.
Sweeten with sugar or Splenda to taste.
Add Cinnamon to taste.
Add lots of butter or good quality margarine to make it buttery.
And a little water to thin it down and bring to a simmer.
Serve hot and pile it on thick.:D

Sounds pretty different. Might be interesting to try some day, but I expect the real maple syrup will never be replaced on my table. Just no comparison between the real stuff and the goo you find in most stores.

:D Maybe I'll try yours out next weekend, though. We seem to have a can or two of cranberry jelly lying around...

Kazeryu, don't know how it would be with the cranbery jelly.:confused: We use the whole berry sauce, probably should've made that clearer.:o

Oh wait, I did say, "whole berry cranbery sauce." Maybe I wasn't as forgetful as I thought I was.;)

Cranberries huh... That’s funny; my latest thing, is those dried cranberries you buy in the bag regular flavor of course, why anyone would try to make a cranberry taste like a cherry or orange is beyond me... I like ‘em better than raisins. I eat ‘em plain, in stovetop stuffing (particularly cornbread), and even eat them on salads with some hulled sunflower and pumpkin nuts and a bit of raspberry vinaigrette ( and don't forget the blue cheese crumbles - gotta have the blue cheese). I'm not a big salad fan, but I could eat that for a dinner and have no complaints.
I tried to make homemade cranberry sauce this thanksgiving, but I think I put too much orange zest in or something - it was pretty bitter, in spite of the sugar.

If you like cranberries, you might like to try this.

Put fresh cranberries in a pan, add a little sugar and a little orange juice. Add a sliver of orange peel taken with a peeler. Now top up the pan with ruby port. Bring to a simmer and turn off the heat. Leave to cool, or pour into sterilised jars whilst hot.
 
Mix dried cranberries, raisins, salted peanuts, M&Ms--all in pound quantities, then leave the jar of them on a convenient path from kitchen to workshop/tv room/rec room/living room...what ever.

They disappear like Scottie's transporting them when you turn your back.



Making your own cranberry sauce just involves boiling them down, adding sugar, spices (like Yvsa's cinnamon), and is astonishingly easy...did it for the first time this year.

The stuff left over after turkey dinner makes a nice flavor-changer when used as an addition to your tea or coffee. Toss a little powdered ginger in there, and your tongue goes on "search" mode trying to identify all the flavors.

Really good stuff.

(Bacon...EVERYTHING is better with bacon and pork sausage and pork links and ham slices and.....sigh....There was a little restaurant at a cross-roads, housed in an old school's former cafeteria...named the "Clyde Cafe." Great motorcycle roads lead to the intersection. A few of us would meet there, or ride with that spot as a destination. The waitress/grandmother/pie maker/don't-give-me-no-lip-punk member of the family who ran it would take orders...once all six of the folks sitting at the table responded to her inquiry about bacon/sausage/links with "Yes."

Gone now...almost no breakfast joints left. They couldn't survive the big franchise world. Just not worth the trouble and cost for the return on investment.

I like cranberries ! I have to admit I might find it too strong a taste on pancakes . I have cranberry juice with just a little apple cider vinegar in the mix. I use it instead of lemonade in the summer and as a tonic in the winter .
It is the ultimately refreshing drink!

I,m from Quebec and so have maple syrup galore . I might try a few cranberries in the pancakes themselves .

Man , Haven,t had breakfast yet . Only thing in the fridge is bacon . I guess I,ll try it another time when I,m not hungry ! L:o:L

hrm, I guess that's true, probably won't come out the same. If I do end up trying it, I'll let you know how it goes.:thumbup:
 
Darn ya Ysva! You talked me into eating something substantial for breakfast. I had pancakes and some of that pre-cooked bacon, but regular syrup, and I sliced up a banana in the pancake batter. Good eats, but I can just feel my cholesterol numbers going up!

Oh well, only live once.

Cranberries? Yes. Love 'em.


But what I could really use with my pancake breakfast would be a case of choke-cherry syrup. Hard to come by out here...sure do miss it! :(
 
You read my mind Yvsa, cranberries are definatly my favorite fruit (possibly even favorite food, tied with ceviche) Cranberry sauce can be eaten on almost anything. There are a few big peat bogs around where I live so I would always get big crates of the things from the gus who harvest them. In season you can walk in burns bog and pick the wild ones. I love the smell of cranberries in the morning (and neem).

Avocado. One day, I plan a restaurant, The Awesome Avocado, which will, of course, be dedicated to the proposition that all food is better with avocado and cheese.

last week i did some french toast made with potato bread and ohmaha steaks brand precooked bacon-
 
I like to take left over french bread, and use it to make ham 'n cheese sandwhiches. :)
 
That syrup ought to go great with Buckwheat cakes and sausage! That sounds like a project for this saturday morning....thanks for the recipe!
