Grind Angles

OK I've read all the stickys, and I can't seem to find this info...maybe it's because I've been up since 3AM staring at computer screens...

Does anyone know the grind angles for the Bushcraft and the Santuko? Might be nice to know just in case I need to touch up the blades...If it makes any difference, the steels are D2 and CPM-154, respectively. Thanks!

bushcraft grind angles are 12.5 degrees each side. :thumbup:


Santoku is a secondary bevel...I usually do these at 30-40 degrees inclusive since I flat grind them rather thin. (0.080-0.012)
 
Thanks Dan! These are beautiful knives! My son is a chef, and your Santoku is a replacement for the Onion Classic I had and gave to him. He saw it last wek, and wanted to arrange a trade!

Now I need a 3 inch pairing knife to match!

What angle should be used to sharpen a Santoku with a hollow grind? What angle for that bevel relative to the flat?

If you take care of your edges and don't mind more frequent sharpenings I higly recommend going to 20-25 degrees inclusive.

Personally, since my knives will bump around in the sink...get worked pretty hard...and I don't like sharpening them every week...I set mine at 30 degrees...whether hollow or flat grind.

Cool, I eyeballed the original angle at 15 degrees per side which is the red dot on the Edge Pro (Apex).
 
If you are using an Edge Pro just mark the sharpened edge of the knife with a marker. Judge by eye and make a light pass over the edge with a fine stone. If it removes the maker high on the edge raise the arm remark the edge and make another pass. If it removes the maker low on the edge lower the arm remark the edge and make another pass. Repeat until it removes all of the marker which means you have matched the original angle. With a thin kitchen knife you can use the angle markings on the Edge Pro but on a thicker knife this will not always be true. For example if you had a 0.25" thick knife with a flat grind that had a 15 degree primary bevel and a 20 degree secondary bevel setting the Edge Pro to 20 degrees to sharpen the secondary bevel would not match up because of how the knife lays on the Edge Pro. This is where the marker technique comes in handy.
