Grind left before professional heat treat

Hello about to start making some knives from CTS-XHP and I have a professional heat treating in my town and it's cheaper than I thought. So how much do you need to leave for grind after?? New to me but I get sert's for the blades and I like that idea. Any information would be greatly appreciated.
 
I find grinding and hand sanding is easier prior to heat treating. I like to take mine up to 400 or 500 grit hand sanding then send them off. When they come back I start at 500 at a different angle and go to 800 for the finish.
 
I do almost exclusively thin kitchen knives, so YMMV, but I just profile them, clean up the shoulders on the tang, drill any holes, and send them out for heat treat. I do all grinding post HT.
 
A lot of folks shoot for the edge thickness to be around 0.020" to prevent the edge from looking like cooked bacon following the quench.
