What would be the easiest grind to do? I like the look of a scandi grind but I don’t know if that’s a grind for more skillful craftsman.

Simplest is an FFG (Full Flat Grind). You grind/file/sand from the spine to the edge. You can also add the distal taper while doing it. A small secondary bevel is added to strengthen the edge when sharpening.

Some info here:

Agree with this... Scandi's are actually pretty difficult due to how low the grind height is

Indeed, the toughest thing with scandi grinds is that if they aren't perfectly flat, it'll show the first time it's sharpened on a stone.

I would say a convex grind is pretty easy as well. The biggest issue is dealing with a plunge line.

Do you have a belt grinder? Or are you asking which arrangement of bevels is the easiest to create without a grinder?
A lot of UK makers use a jig or guide to grind Scandi bevels. It is not that unusual for them to then finish them on a stone by hand. Filing such a short bevel cleanly takes practice and or a filing jig.
I started filing flat primary bevels to the spine, left the edge pretty thick, and used coarse water stones to create a convex secondary bevel blended with the primary. Cut wood well, but I should have made the edge 0.5mm rather than 0.75mm before heat treat because without a grinder I could not readily thin the blade before sharpening.
