What would be the easiest grind to do? I like the look of a scandi grind but I don’t know if that’s a grind for more skillful craftsman.

Agree with this... Scandi's are actually pretty difficult due to how low the grind height isSimplest is an FFG (Full Flat Grind). You grind/file/sand from the spine to the edge. You can also add the distal taper while doing it. A small secondary bevel is added to strengthen the edge when sharpening.
