Grinding larger blades

I need some tips on grinding larger wider blades and getting a high grind line, right now I'm using a 2x42 and a 1x30 making the largest knife I've ever made and I'm having a lot of trouble, I freehand grind, no jigs, no tool rests on any of my grinders here's what I'm working with

It's 3/16ths steel, is it just a practice makes perfect kind of thing, it's like I get a flat grind then I go back in and get a different line after cooling it in the bucket. Should I deal with it and correct it in the end?
 
The different grind lines should work themselves out once you get a flatter surface, just keep going. To get the grind to come higher you just need to adjust your angle.. put more pressure towards the spine when bringing the blade across the belt, and be sure not to keep grinding material away from the edge if its already thin.

Mark has it right. Also, if you have the option to do so, it can be easier to grind a series of passes on the contact wheel up the blade to relieve a lot of material first. Then use the platen to take down the high spots of the scallops and tie it all together into a nice flat bevel. It is a bit faster that way and easier on the belts. Isn't your handle a bit on the short side for that large a blade?

Thank you! No the handle will have a finger hole, it's kind of my thing.
