Recently there was a thread and methods of holding onto blades while grinding was mentioned. Welding magnets work fairly well and then I saw this one today. On/Off switch will make it a breeze to clean off and 90 lbs holding force should get the job done on larger kitchen cutlery.

magnets work well at holding things strongly. you can buy or build a magnet bar from rare earth magnets.
or you can buy a magnetic chuck that can turn off.. if you go the route of magnets make sure you have the means to de magnetize
your blade when done... otherwise it will always attract magnetic things to it like steel dust as you try to work..
just my Advise.... not fun drilling a hole and having things stick where you are trying to work....

I got one of these magnets with handle from Amazon that you see most of the guys using in yt videos and it was really an eye opener to me for flattening post HT.
