As already mentioned, the FFG versions will slice significantly better due not only to the flat grind but also because they're ground thinner (especially toward the tip). The saber grind will be better able to stand up to lateral force (e.g., light prying -- not that you should or are planning to do that). Edge retention and ease of sharpening will be the same assuming they're made from the same steel, in this case either VG-10 or ZDP-189. Comparing VG-10 to ZDP-189, ZDP-189 has superior edge retention but is more difficult to sharpen, while VG-10 is easier to sharpen but comes in second in edge holding (although it's still very respectable in that regard).
I'd definitely recommend the FFG version over the saber-ground version for the sorts of things you're planning to use it for. I'd also say that the VG-10 version should be fine for your uses, unless you're just eager to try ZDP-189.
