Grip tape

Skateboard tape, is probably going to be to harsh on your hands.

Look for some rubberized grip tape, for indoor/outdoor use. They make some smaller pre-cut ones, for cellphones, that you might be able to use or mod.
 
Go to Amazon and look up Dragon Grips. I have used their products on a variety of knives and lights.
 
There is a clear rubber skateboard tape around on the big river site. It is grippy but not harsh on skin.
 
To increase and change handle size, the best thing I've found is silicone plumber tape... Most hardware stores should have it... It wraps tight, sticking to itself. Is pretty durable. Adds cushion, shock absorption. Cuts off cleanly if you want it gone.
I have it on a couple Scrapyard knives
 
Goon Tape is excellent. It is made for hockey, but many people use it on their EDC items.
 
Paging Wowbagger Wowbagger ... I think he has had success with Talon Grip tape. 5" x 7" sheets and cut to your spec yourself. I think it is available on the river site.
 
Talon grip tape is good, I have it on a couple pistols - the PRO version is grippy and not too abrasive. However I can't say how likely it is to eventually peel off if you are talking about a folder where the tape doesn't wrap all the way around the handle.
 
What is the use of the knife?
Skateboard tape might be perfect for a fighting knife, but will suck for one you're doing a lot of chopping with.
The rubber tapes often have a lot of grip, but sometimes they are too "sticky," for day to day use.
The various hockeyy or raquet tapes might be the best. Good traction even when damp, but won't cause hot spots, blisters, or abrade the skin when using the knife for a long time.
