I have had a grohmann #1 knife for some time. I actually also have the #2 bird & trout and the #3 boat knives also, all in stainless.

I decided to try a couple of the R Murphy / Herter's carbon steel versions of the #1 as a fixer upper project. I sanded the handles and have applied two coats of pure tung oil hitting with fine steel wool between coats. Plan to add another coat or two. On the blades I sanded with 1500 and 2000 wet dry and then polished with dremel. Photo follows - grohmann in the middle.

QUESTION: Before starting I attempted to seal a samll gap between wood scales and blade (at blade end of handle) with some super glue gel. This seems to have worked fine on one but the other still has a tiny gap. Should I try another line of supe glue gel or is there a better option to lay a thin line of waterproof glue (a caulking effect)???

Try a marine grade(or other) epoxy. I use only that to fill any gaps in knives I own. ( usually on wood handled models.)
 
Superglue (cyanoacrylate) is not noted for its water resistance. Try the epoxy.
