Grohmann R350S Jack Knife?

Grohmann says they "sharpened" the blades to between 50 and 60 degrees inclusive.

From what I can find online, the blades are most likely 4116 Krupp.

Any reason(s) not to reprofile the edges to 20 degrees inclusive?

4116 is roughly equivalent to something like 420HC. Most knives made with steel like this might be hardened to mid/high-50s HRC. Grohmann states their 'outdoor' knives' stainless is comparable to 4110 (essentially same ballpark as 4116), with their pocket/lockblade knives in a stainless similar to AUS-6 (again, very similar to the others mentioned) and all theirs are in the HRC 56-58 ballpark. Anything between 30° - 40° inclusive should be fine, at least. With such steels in traditional pattern knives and the typically simple EDC tasks associated with those patterns, I'll usually take them to 25° - 30° inclusive, eventually.

20° inclusive (10° per side) might be too 'delicate' for such a steel. I'd expect to see edge-rolling at that thin geometry, in steel like this. That's why I don't generally go below 25° inclusive (12.5° per side). Great slicing geometry at that point, with still enough edge stability to make maintaining it worthwhile.
