Hi folks -

Once upon a time there was a recipe contest here on the JK Forum, and one of the many fine recipes posted was gruntsoldier's dry rubbed pork shoulder -

Since I now have a smoker, and since my family is coming over tomorrow for a celebration, I decided to make one shoulder on the smoker and one in the oven per Grunt's directions -

Should be interesting - and of course I will take copious pictures and post them here.

Following is a picture of the two 7lb roasts brining in my big Coleman Extreme cooler -

Lol the smoker will probably win sir. However the oven pulled pork is always delicious also and a little less paying attention to the temp and what not. Your last one came out looking darn good!

Yep - that last picture did me in the last time, and I had to do the same!

Also I did what I called a Bacon Explosion several years ago - and then again a couple of years ago at the JK Bacon Gathering - we sliced it up and ate the slices on sliced Krispy Creme donuts....

I can hear your arteries snapping shut from here in Maine - even with the fireworks that my neighbors are shooting off over the Bay. :eek:

… but geez it looks soooooo good:thumbup:
 
The smoker is fired up, the oven is pre-heating and I am preparing to pull the roasts from the brine and commence the rub down ...... pictures to follow...\

Here they are, fresh from their 10.5 hour bath in the brining solution -

Time for the hand rub -

I made a double batch of the rub, and a triple batch of the brine. I sprinkle the rub onto the roasts while rubbing it into the roast.

Once I have them rubbed down good, I use the remaining rub to put a nice crust on the fatty side of the roast - I just sprinkle a nice even layer and then pat it down instead of rubbing. You can see the one on the left in this picture has the pat-down, the one on the right has not been done yet -

Smoker Shots!

The one in the oven is done and resting, the one in the smoker has another hour to go - I had to get up and moderate the temp a couple of times overnight as we got some thunderstorms and the temps went down considerably -

I put this one in a pan for the final push to make sure it stays juicy.

The whole house (and the back yard) smell awesome though!

May you purveyors of pork porn burn in a perdition hotter than the hottest porcine roasting pits of purgatory!!!! :p ;) :D
 
The meat came out great - all 15 lbs of it!

The smoker wins for sure -

Smoked on the left, roasted in oven on the right - both were very good with great bark -

I chopped the meat up with my JK / Protourist Galley Wag and a large carving fork - the meat was all pull apart tender and very juicy since I brined it for 11 hours

We'll be eating good for a while - we will freeze some and have some with pancakes later in the week.

Pretty sure I can smell that over here.

That looks fantastic, Andy.

Makes me want to build a smoker.
