Hello bladers!
Well. I build my own shrarpening system. It's based on edge pro apex system.
Under the angled base there is magnets to help hold the knife in place. I saw on YouTube
one guy that I learn a lot with him and he hold the knife in place using edge pro apex. He hillside the handle on the ramp side and start sharpening whithout move the blade. Just like him I don't care about a little bit more accute angle on tip or heel.
So, is there a trick to put a larger knife like chef knife in the same place on both sides every time it goes to sharpener? Do you do a pen mark and let it on blade? Do you do a math splitting the blade by 2 and centering it? Do you do the same math but drawing a line on edge or spine?
Im asking cuz I still don't have enough control on left hand.
