This is an excellent gyuto for general kitchen use. It's extremely thin and cuts better than any kitchen knife I've ever used!
The blade is constructed from ProCut steel and is heat treated to 64 HRC. I performed all heat treating operations in my computer controlled heat treat oven. ProCut takes a very fine edge and holds it well. It is not stainless, and will quickly develop a nice patina.
The blade is full flat ground with a very slight convex to aid in food release and cutting performance. Food release is very good from my testing and slicing onions is effortless. This blade profile works great with a variety of cutting techniques.
The handle is African Blackwood and Cocobolo. It's nicely polished, but not slippery.
The saya is poplar and features magnetic retention.
The geometry is perfect for a precision slicer! Prior to sharpening, the edge thickness is .0015". This is an extremely optimized slicer and is intended to cut soft materials only.
