I use a Pacific Salt in the kitchen and really like the fact that I can close the knife to protect the edge when I'm not using it.
Keeping the knife clean has proved to be no problem.
However, I have found that the design the knife makes it less than ideal when using it on a chopping board.
How about a folding knife designed specifically for the kitchen?

I think a similar shape with a lockback, H1 steel and FRN handles would be ideal for kitchen use.
