Hamaguri vs convex edge

Hehehe...I just got it! They are calling it that because of the curvature of the edge is similar to the clamshell. I always wondered why that terminology was used because it made me think of a soup I eat. Now it makes sense! :p
 
NO they are two different kinds of grinds.

A Harigami/Clamsheel edge is on a chisel ground knife. One sided edge.
A Convex is a 50/50 ground knife. Two sided edge. That's the big difference.
 
From what I have seen, the hamaguri generally refers to a full convex (also called an appleseed grind), and convex generally refers to a convexed edge. All of the hamaguri grinds I have seen were pretty chunky, while most full convex american knives I have seen are more akin to a full flat that rounds off.

Now that I've read your response I realized that I answered incorrectly. For some reason I had chisel grind in my mind.
