Top one:

Small French Chef, 9.25" overall, 4.25" blade, 1095, 1/8" thick, full flat grind, stabilized curly Bubinga handle

Bottom one:

Large French Chef, 12.5" overall, 7.5" blade, 1095, 1/8" thick, full flat grind, stabilized thuya burl handle (smells great!)

I decided to make a set of Mater kitchen knives in 1/8" thick 1095.

Here they are in Curly Maple:

One side has a short hollow grind, the other side has a tall flat grind.

If you are right-handed...the flat grind goes on the left (inside).

So, what we have here is a right-handed (on top) and left-handed (on bottom) set.

Highly reccomend the Santoku. I got one previously from Dan, and it cuts like a dream! the first week I had it I cut way more vegetables and other food just cuz it was so damm easy and fun to use!
