I try to get my scales pretty much final sanded before I attach them, that may just be a me thing though, it's usually easier to not f up your blade if you have done most of your sanding before attaching the scales....Otherwise I think if you epoxy then and mount them and the final sand them to match your blade it'll be OK, wait for others to chime in.
 
Take the fronts of the scales up to whatever final finish you will have on the rest of the handle because you can't after. Also I agree that the blade looks to be sanded on a diagonal will which looks odd. Personally I would cut the pins longer before assembly. Leave extra length so you can do some peening on them. On this and the antler knife the pins appear to be below the surface of the scales on both of them.
 
I don't like the "V" front of the scales. It would look better if more rounded.

The only way to make an angular front to the handle work well is to angle the plunge to match ... which yours does not.
