I have a old slip joint that needs new covers. I believe the original covers are celluloid, and are outgassing.

Being I am somewhat strange, and want something different, I was wondering if making a pair of wood covers, approx, 1/16 inch undersize for length and thickness, and covering the wood with leather (bringing the covers to the correct size) would work. Being from Florida, I might be able to talk one of the gator farmers out of a couple scraps of gator leather.

Gator leather is likely to be much thicker than 1/16". Personally, I don't think a leather covered scale would work well, but give it a try if you want to.
