What are some domestic woods that can be easily bought at local lumber yards that make good scales?

I bet this would be a great question for one of the knife making subforums here. You should check them out.

I have used Ash and Black Walnut from trees on my land. Cherry is pretty easy to come by too. Most wood at my local big box hardware store is pine, redwood, or cedar, none of which are good ideas. But if you go into the replacement handle section for hand tools, they are usually Ash and very rarely Hickory. If you go back to the Wood Trim area, there will be smaller planks of Oak and Walnut, which are also good. My local Lowe's also has a Hobby section with small sheets and thin rod stock of brass.

For a easy to get hard wood I like Oak, If you can find a flooring or cabinet shop they could probably hook you up with scrap large enough for handles .
