ha! Love the screen name! S90V is going to be MUCH more abrasion resistant than HAP40 and hold its working edge for much longer as well. This is in my own experience after using both steels at work. I had to touch up HAP40 more frequently than I did with s90v. The trade off is, it's going to take longer to bring s90v back from dull, than it will HAP40. But everyone knows, you shouldn't let your knife get very dull to begin with. It's part of the knife maintenance thing.
