The main difference I see is in the table. One has the option of wide set magnetic table extensions. For up to 6 to 8 inch blades is the M3 table stable enough to get consistent results?

It really depends on what size knives you plan on sharpening. M3 is fine for folders, but if sharpening larger kitchen knives I’d want the V8. The nice thing about Hapstone is that it’s modular, you can add features as needed.

I have the V8 and a M2. The M2 is the same thing as the M3, it just doesn't have the modular base. The M2 sharpens large knives fine. The reason I got the V8, is to sharpen the small, secondary blades on my slipjoint knives. By removing the side table extensions, you are left with a narrow table, that is perfect for small blades. If you have many small blades to sharpen, you probably will want to lengthen the slot, in the center piece of the blade stop. That way you can turn it around and use the square end as you blade stop.
