Hard use of a knife..

This woman is The Real Deal.

She reminds me a bit of my Chinese ex-wife. Just.... EARTHY. One time when we were courting and I was visiting her in Guangzhou, China, we went down to the market street. There were vendors squatting on the sides of the street by their fish tanks. God knows where they brought the fish from. But she talked to the lady and pointed out the fish she wanted. That lady pulled it out of the shallow tank, stuck the point of her clever through the fish's head, and cleaned it right in front of us in about 15 seconds. I've never seen anyone so good with a knife!

We went home, she threw it on the wok and we had the freshest fish I've ever had. I learned that day that the best meat in a fish is the cheeks. The rest? Pick off the bones with chopsticks. Suddenly, most fish we have here in the states tastes half-rotten.

Did you notice how she was breathing funny when she at it? It's because she packed it full of so many damn chili peppers (then dipped it in a pepper salsa!) it was burning her face off. :-D

By the way, in China, they only use two knives: A clever and a paring knife. Nothing else is needed. I asked her why the clever, and she said because it can chop through bones, and also it has a very wide blade; it can be re-sharpened many times. They are very thrifty!

I LOVE it! That boys and girls, is real world knife use by someone who not only doesn't know how under equipped she is because she does not have the latest wonder steel of the month, but most likely doesn't care. A thin sharp carbon steel knife sharpened on a rock and dinner is served.

LOVE IT! Especially the part with sharpening it on a rock.

I was curious when I saw that she was going to eat wild-caught turtle, they can have some crazy parasites. Then I saw the crazy amount of peppers she put in, the sheer amount of capsacin should have been enough to melt through her jaw. If you listen closely you can hear the bacteria screaming as they die.
 
Couldn't be hard use. That knife wasn't s30s45s90m390k3903vd2elmax880crv2lc200n20cv204pm4 blade steel. Cant cut....Sarcasm steel of the week people...smile a bit before busting out your steel charts.....

Not to mention that it was probably cooked to all hell in that pot. Once you get to boiling temps, the germs die. The pepper will kill off any survivors. :eek:
