I use boiled linseed oil on all my working tools like axes, hatchets shovels, rakes, hammers etc. That of course is if the original finish, if they came that way (varish) is worn off them. If they still have some or most of their finish on them, Formby's Tung Oil Finish (low gloss) does a nice job.

Well first you'll need to sand off any of the remaining finish. But if that's done then the most popular finish for axe/hatchet handles is boiled linseed oil. Some people thin it out with mineral spirits, turpentine or other solvents to aid penetration. I think most use it straight - which works just fine. I'm currently trying out tung oil and so far I'm happy with it. Another option is a mix of beeswax, boiled linseed oil and turpentine. It's best applied warm.

I was at a yard sale last weekend and came upon 3 bottles of Formby's tung oil for 25¢ apiece. I just finished a restore/re-hang using this oil. I'll start a thread with the results.
 
I like to give it 24 hours between coats but I've recoated in 12 hours without problems. The key is keeping the coats thin. And you might need 48 hours or more after the final coat before it's fully cured.
