Hattori and Masahiro

Hey guys from Aussiestralia,

Just recieved my Hattori chef and petty HD series knives and my set of Masahiro traditional knives (Bessen series Deba, Usuba and Yanagiba) from Japanesechefs.com.

Holy cow are they sharp... just waving them over stuff and things start fallin apart!

Pretty happy with the service, fast delivery and the finish of the knives are great. The whole lot were packaged in bubble wrap inside their individual boxes.

Just gotta learn how to use them now :)
 
I'll give you an idea on Deba which normally has a single bevel out of factry. Should modify it to double bevel approx 1/3 from handle to be able to chop.
Keep single bevel rest of the top section to do delicate job.

And don't hack with Yanagiba and Usuba. They've designed for delicate slicing.
