Maybe everyone but me already knows this, But....

Got a food processing catalog from Cabelas and was scanning through it this evening.

Quite some time ago, someone started a Buck "wish list" thread. My wish was for something along the lines of a 121 in S30V.

Well, I may have gotten my wish. There is an Alaskan Guide fillet knife by Buck that has a 6 inch blade, is 11 inches over all, so must have a 5 inch handle, and is S30V.

Nice looking knife with a rosie handle and a good looking leather sheath.

I looked at Bucks website and couldn't find it there, so may be a Cabelas special thing.
Its a bit pricey, but I have paid more for less before. Wifey told me it would last the rest of our lives, our kids, and the grandkids. I love my wife :D:D ....
Will let ya know about the 10th how it is. I hope it doesn't really take that long to ship.

Cabelas item number is 51-8372 if y'all want to give it a gander. It is supposedly on sale. Probably wouldn't pay their full price tho, and I had some points.

It has a couple of great reviews.
 
I look forward to your review! I have been kicking that one around for over a year now. Yeah, the full price was expensive.... :D It looks like it could be a great user! Let us know!! ;)
 
Hi Ratty,

That one has been for sale at cableas for a few years now. The $$$$ was huge for a fishing knife IMHO. But, I bet it would be sweet for processing deer. Even if it were offered for half price it would be a hard sell for me. Funny how each of us has our likes and dislikes; I would not even give a second thought to paying the asking price for the new AG 113....LOL (but would have to use the $20 coupon).

Dumb question I guess, but I'm not in the loop: how is it "by Buck"? Buck actually makes Cabela's Alaskan Guide knife stuff?

Yes, go to Cabela's site click on the knife and increase the size and read the stamp. It's a Buck. DM

Well, I may have gotten my wish.

It's a fillet knife, so it's going to have a lot thinner blade and a lot more flex than a 121. Only the early 121s had much in the way of flex. The later ones are more like a regular hunting knife.

I see it as an expensive experiment to see how the S30V stands up against a steady diet of fish bones.

I said in the beginning that this one was way overpriced and would still be overpriced when nobody bought it and they were forced to put a sale price on it.

Can't wait to see how you like it Larry.

I figure it will be good to reach in a little better around that backstrap and those hind quarters.

JB,,,I can't believe I haven't seen it before now. Getting slow I guess. I figured it had been around a while when I blew up the stamp and saw the year code....duh....

Will let yas know when it gets here. For me, the test will come in another 6 weeks or so...:D

If nothing else, wifey will love it in the kitchen.

And I didn't mind paying the bucks for something that will be passed down for generations to come. Can't see ever wearing it out.

I have some old kitchen knives that have to be a hundred plus years old, so one of these should last.

I helped my brother butcher his deer today. He used his 123 fillet and I used the 125. They worked fantastic, and I think a fillet is one of the better ways of getting the meat off the bone. I am going to take a harder look at that AG fillet, but will wait for a coupon. ;)
 
Postfalls, Your LakeMate should be very close to this AG filleting knife as the two are close. Only the handles and blade steel is different. The thinner blades have advantages in processing meat. DM

See if you can get your hands on a copy of The History of Buck Knives by Tom Ables.

Interesting reading.

Yes, it's fairly subtle, but it's always there. It might hurt sales on some products, but people who buy knives are generally not the type to be offended by such things.

S30V excells as a slicer, but is a compressed powder and is brittle. A fillet knife needs to be highly flexibility when cleaning large fish such as halibut or salmon. I suppose it would do OK cleaning smaller fish. No wonder Cabelas has removed it from the lineup.
 
That steel probably won't stand up to a steady diet of cutting through heavy fish bones on larger fish, but it DOES do well on the easier jobs. Maybe they should re-name it the AG Boning Knife and try again?

Suppose? Probably?

Slamming S30V again and don't even have the knife to field test.

Closing this thread till I get mine and do some field work with it in a few weeks.
