heat treating for s35vn

i'm trying to make kitchen knives for my daughters out of s35vn and need reccommendation
as to where to send for heat treating.i've used both peter's heat treating and bos -both very satisfactorily. which is better for s35vn or is someone else reccommended? also how hard for a kitchen knife?

I hear that Bos is the master of stainless, but peters gets it right every time, and so i don't think you can go wrong either way.
 
If I were to send a knife out, for heat treat Peter's would get my business. I send heat treat to them from work, and have never had a problem in all the years they have done work for us.
 
For hardness of kitchen knife, I think it depends a little on usage.

If it's a cleaver, it probably needs more toughness; a paring knife probably needs better hardness for edge holding.

I'd probably shoot for 60-61.

(Actually, in the two S35VN paring knives I've made so far, I hit 58-59 with only dry ice for cryo. Not quite as high as I was hoping for, but the knives work very well.)
