I travel quite a bit and want to cut my coats down to 1 (2 actually bc I want on of those ski jackets with outer shell and fleece zip in liner). I really think I want such a coat and RARELY see temps below 30 degrees F so I really don't need a giant stadium coat or anything like that. I want one of those that can be OK for cold weather and the zip the liner out for cool, wet weather, but I have NO idea as to what brands are good or what type to buy, any input would be appreciated.

Get a Cabelas catalogue and look at the stuff in there. No matter the brand, Cabelas stands in back of anything they sell.

I've seen some Columbia brand coats like you mention.

Columbia jackets have worked great for me , I have two Icedragons and they have held up great , You can find some great deal's on epray. I have one North Face but they are not as nice as the Columbia.:D

5.11 tactical makes a 5 in 1 jacket now with the fleece liner. You can remove the liner and wear that or zip off the sleeves and have a fleece vest. As normal with 5.11, quality but at a price. They are at 199.00

Columbia Bugaboo Parka. I just bought one from Bob Wards for $149, shipping in the Continental US is free, they shipped it to me via Second Day Air for $2.50(!). I think I also saw older models at Campmor for less than $100. The Bugaboo is one of Columbia's older designs, so they've tweaked it over the years to where it is damn near perfect. Every detail is well thought out and executed.

What the heck do you need a 3 season parka for in Hawaii? ;) :)

Your Wanted description sounds just like my Columbia Bugaboo. I've had mine for years and still wear it as my daily winter coat. Last year I purchased new heavier coat, but haven't worn it once since the Bugaboo is still holding strong.
