I'm looking for a thin, 3ish'' blade that will be used almost exclusively for fish and small game tasks (no bushcrafting or whittling for this one, strictly messy and fleshy ) and thought to ask for everyone's recommendations. For example, I've been looking pretty intently at Moore Maker's Stag Small Game Hunter and Moki's Quince Wood handle Bird and Trout fixed blade. I've never tried either maker, but both seem like they produce quality products. I like wood or stag/bone handles for the most part and leather sheaths.
I do have suitable knives that I use already - a red, plastic handled Mora and a German Eye folding trapper - but I want a knife with a bit more flare, not ostentatious, just some love and sweat in the handle. The Sowbelly Fin and Fur from Boondock Knives at Arizona Custom Knives tickled my fancy, but I'm don't want to spend quite that much on a knife I REALLY don't need, just want because I like to buy knives. So my price range is no more than $80 for this one.
Some follow up questions are: do you prefer stainless or carbon steel for a knife that will be mostly bathed in blood and likely getting wet (carbon has worked fine for me so far), what size/shape do you generally look for, and, of course, what do you use in these situations?
