Help finding 15" stainless blade

I'm looking for a knife for someone at work.

It is going to be used in the seafood industry, for steaking fish like halibut, sword, tuna, salmon, ect.

I'd like to find something with a 15" blade:D, stainless with a plastic handle(or something that will not harbor bacteria).

The blade needs to be thick enough so it doesn't flex. The knife needs to have a little bit of a curve and not be straight like a cleaver.

Any suggestions?

ETA : It also needs to be NSF certified.

Look up meat cutter supplies online. You are looking for a scimitar knife. They are avaiable from commercial/industrial cutlery suppliers.
 
Check out Dexter-Russell Cimitar. It has an NSF certification and is I think the knife your looking for. However it is 15" overall with a 10 inch blade. They may make larger ones.
