Help I can't sharpen my knives.

OK I will admit I have some high end knives that I can't sharpen worth a damn. I haven't ever been able to put an edge on a knife and I grew up on a farm. It's really sad I know. I understand the process but I can not get an edge to save my ass. I bought the Lansky system with the rods and I can't get it to work. Is there a good system for people like me? Most of my steels are S110v, S30 and 3v. I know they are not easy to sharpen but I would love to learn instead of sending them off when they get dull. My grandad could free hand a fillet knife to the point where it was like a light saber. My edges won't cut hot butter.

I'm sure there are many, many more threads on it as well if you search for them. The lansky isn't the best guided sharpener on the market, but it will still get you a great edge when you learn a bit about it.

Using a sharpie to mark the blade edge is always a great place to start, to make sure your stone is touching the apex, and therefore being able to form a burr.

Do you have any of the diamond hones for the lansky? If you are working with s110v and such, it's well worth the investment. I only have the extra coarse (for reprofiling) and the fine diamond, but they have been great. (really wish they had extra fine as well)

Get some easier steel to sharpen and try that first. Also the steel you listed would be faster with diamond kit, you didn't specify which kit you had.
