Help Identify This Folding Knife Purchased in Spain

Hello all, I am new to the forum.
I just returned from a trip to Spain and while at "El Rastro", a large antiques market in Madrid, I purchased this antique folding knife. I have been searching online for any clues as to its origin but have had no luck.

Other stainless steel items from European countries are inscribed with INOX standing for inoxidable or stainless, but this one seems to say "INOXI" next to the insignia.

If anyone can help to identify the manufacturer it would be of great help.
The knife seems to be great quality and have hand engraving.

Just guessing, the logo looks like a griffin or some kind of gargoyle. The pattern looks like a gentleman's knife, is it nickel silver? Any clues about the custruction such as brass liners or steel springs? I am also curious to find out more about it.

The only Spanish maker I’m familiar with is Filarmonica, but that is mostly for fantastic straight razors.

Spanish Toledo steel was damn near mythical in its reputation.
