Help identifying the two kitchen knives i bought in kyoto

Hello when i went to japan a year ago
I bought two knives in kyoto . I did so on a whim and did not do research on maker or blade type. I cant figure out the type i think one is vg-10 the other possibly sg-2 but not sure since they look different blade material. Any input is appreciated.

I tried identifying with my phone but having trouble identifying the signature

I’m hoping the quality is good and i didn’t overpay for something mass produced.

Was sorta difficult to I tried… i think because those wave patterns overlap as a background on the characters
 
I think you'd have much better luck with taking magnified photos in right light. My brother speaks Japanese but sometimes hand written, stamped or engraved text can be hard to read for non-native and the moving video isn't helping at all.
