Help me choose from these 3 chef's knives

Gentlemen,
Its time I picked up a nice new chef knife, and I was after some suggestions and opinions. I want something around 8" long, 2-2.5mm thick, and around or under the $200CDN mark. Theres a very good chance this thing ends up in the dishwasher, because frankly.. I get lazy sometimes.

These are the 3 I am looking at, and since the MAC MTH-80 is on sale today for a sweet price, I think thats what I will go with.

I think alot of people are buying kitchen knives this week lol I am thinking this cause Derricks videos from knives ship free.... Maybe just coincidence lol but I am getting one because of that! I'm looking at the shun classic also.
I may save a bit and get a bark river kitchen.
At any rate I'm liking shun.
 
I've had one of those MACS for over 10 years. Served in commercial kitchens, camping, and at still athome. The shuns while being a little more aesthetically pleasing to some, fall short in performance and maintenance compared to the MAC.
 
I don't know what the import duties are like in Canada but IMO you can pick up a much nicer knife for the money from JapaneseChefsKnives.com. GREAT service. When I order from them a couple of years ago, my knives got from Tokyo to Tampa in 7 days for likeless than $20 shipping and no hassle from US Customs.
 
Tojiro DP 210mm gyuto can easily be found for less than half your budget. It has excellent performance, and the vg-10 holds up great.
 
Or you could even go with one of Mark Richmond's Artifex knives in AEB-L from Chefsknivestogo.com . A 210mm Gyuto goes for $75 US. Personally, I wound;t buy any knogfe that had those Granton divots, but that's just me.
 
B34ns is right on the money.

Having used shuns, and seeing coworkers use shun, i would avoid a shun. They might look good, but are weird to use. Plus their handles are much too slick for work duty. Not sure if they addresses the grip issues since I've used them to be honest.

The cheapest I'll go is tojiro or misono. They don't look as nice as shun, but will blow them out of the kitchen.
 
Of the three? Mac 100x over.

Shun has a very "germanese" design. Lots of belly for rock-chopping, quite heavy as well.

Check out knifewear.com if you are in canada, and look at a masakage Mizu, or a yuki. Both pretty close in your price range.
Personally I like light thin blades in the kitchen
 
Misono UX10 series. Not fancy but they are all through the kitchens I have worked in. Check them out. Russ

I have just bought two Tojiro DP 210mm gyutos. very impressed. I have a 120mm tojiro DP petty on the way. I surely like 'em.
