Help Me Find This Burr-Removing Technique Video - Found!!!

OK guys, I have been searching for a video I KNOW was posted on here before as a reference. I have been at this for 2 days. I have looked through all my saved threads, and used up all the Google-Foo I have.

Here's a description of the video I'm looking for:

- The video is of a CHEF (I believe a well known one, but NOT Bob Kramer) sharpening a knife free hand in a kitchen environment. I want to say he even has his chef's hat on, but that part I'm not sure about, as this was quite a while back.

- The reason this video was referenced was because of the burr removing technique he used. In the video (and this part was what was referenced in one of the threads here) when he was done sharpening, he basically pulled the edge of the knife across the face of the stone very lightly. It was done at an extremely high angle, and may have even been 90 degrees. I remember this was a BIG topic of discussion, and is exactly why I want to find it!

- I want to say it was in a very popular thread, but I've looked through all that I have and most of the sticky'd ones as well.

Nope, sorry. Neither of those are the one, but I appreciate the help!

I'll add this to the search criteria. The person in the video was NOT Japanese. I want to say maybe European, but again, that's just a guess.
 
What type of steel are you sharpening . Some steels seem to create a bigger more noticeable burr than others.

It's nothing to do with the steels.

I'm trying to find the video specifically for the technique he used, as I use something similar now. I just want to see exactly how he did it to see how close it is to the way I'm doing it now.

I DID finally find the thread it was talked about in here: Is a bur actually needed?

After a little more search refining on Youtube, I was able to find the technique in this video: The Carter-Stanley Method of Sharpening: Chapter 2: Expedient Method
-Go to 8:05 for Murray doing it.

Anyway, I'm going to do some testing and see if this method works better than the Kippington method, where he draws the blade across the stone at a 45 degree angle, but with the edge still almost perpendicular to the stone surface.
Kippington Method shown here: Sharpening and Stropping
- Go to 2:05 for the technique I'm talking about.

The BIGGEST difference between the 2 is that Carter/Stanley uses this technique on the finest stone at the end, whereas Kippington does this off his FIRST stone, and in the case of the video, it was off a ~500 grit plate.
