Help me pick a fixed blade

So im new to knives and Im looking for a all around fixed blade (hunting, gutting, fishing, chopping)

as far as looks go I like the ontario/ESEE knives, MUST have the cool g10/micarta grips. I like the looks of the rat 5 and this ontario http://www.amazon.com/Ontario-9414B...TF8&colid=2CM0GXBBUBO2T&coliid=I2501PZZ6WFQPK

I am not familiar with the steel, many ontario and esee are 1095 steel is that decent?

As far as price I want to be under 75 if possible. What else should i look at that is just as good or better than ontario for the same price?

I have been running it hard and putting it up wet and it keeps coming back for more. I had Eli at Godspeed tactical make me a Kydex scout sheath for it. Its powder coated I believe, came razor sharp out of the box and is incredibly light and durable. Excellent balance as well.
 
I love my Esee knives, have a bunch of them, I own 2 Esee 5's and use them plenty when out in the woods.
For your intended use I wouldn't choose the Esee5 though but start with a thinner model like the 4 or the 3.
The Esee5 is 1/4" thick, that's not very practical for gutting/fishing imho.
The 1095 steel is easy to sharpen and keeps an edge well, Rowen controls their heat treat very well.

Most Esee knives are over $75 though...
 
Ontario knives are pretty good. Ka-Bar is also great, especially the Becker line. Pick whichever model floats your boat, they're all good.
 
Go full tang of course
If you work in a humidity environment or skinning a lot of game , go with a good stainless steel, i like s30v
If you do work with a lot of dry wood, go with a high carbon steel, i personally like 1095
And now it comes to blade lenght, i use an Ontario Rat 3 knife for most of what i do, but that is me
It all comes down to what you need it for
But if you just want to get into knives, here is a list of good, affordable blades in my opinion

It is not a complete list, but it should give you some perspective, i hope i was of help
 
I'd go Becker or esee. Both great companies with outstanding products. 1095 is an outstanding steel. Very tough, very abrasion resistant. I split well over 3 chords of wood with my esee junglas before it needed sharpening.... And it could still slice paper.
 
How about the thickness of the Esee knives, I would think it would be not a good thing considering slicing ability? I am asking because I am interested of getting the Candiru as a pocket carry fixed blade (with handle scales).

Has anyone, by the way, stripped the coating off the blade of Esee knife and polished it? I would like it better that way visually.
