I'm trying to find the perfect paring knife. I already own one, but I need more! (What would I do if something happened to it?!)

The knife is fairly old. It has a 3.5" stamped blade, no bolster, full tang with rivets, small wood handle. It's perfect because it is so sharp, easy to handle, and fits comfortably in my hand. My mom thinks the blade used to say Solingen, but it has been sharpened away.

I've posted a photo for further identification. http://www.belber.net/knife.jpg

Any recommendations on how to proceed would be greatly appreciated.

Thanks,

Lewellyn

I would highly recommend Victornox/Forchesner paring knives. For the money they are an excellent value. Easy to sharpen and hold an edge.

If you mean buy one, I'd recommend the Woodswalker on AGRussell's site. Kathy and I use it all the time in the kitchen. Great knife at a terrific price. Give it a look!

I like Crickets suggestion, (great ergos on that little knife) but AG Russell also makes a great little paring knife in the kitchen knife dept. I have one bought one for my wife and mo-in-law and they are the "edc" in the kitchen.

I wouldn't think it would be all that hard to make one from a tracing of the one you have a picture of. Or a whole set. Just get you some high carbon saw blades or a bigger old kitchen knife and grind it down to the same shape as the one you like. Just keep the blade cool by frequent dips in water close by as you grind. I do this all the time from old knives I buy for $.25 to $.50 that are broken or chipped up in junk stores or thrift stores. It is fun and you can do it with basic tools. My kitchen is full of that kind of stuff.
