The charts vary wildly on the comparison depending on who you ask. Currently i have 120 through 1000 and a 3000 Chosera. I use the Chosera after the 1000 EP stone. I came across some sites that say this is a progression but the EP site rates the 3k Chosera the same as the EP 600 (can't find the link now because i am at work and it's blocked). The 3k feels a lot smoother, but who am I to say? What is the consensus here? Also, my EP 400 is starting to dish again. I'm going to flatten it again, but I am curious, what is a good replacement for it?

1 more thing, the 10k is way expensive. Is it even worth it or should i just use the polishing tape @ 1 micron?

Naniwa themselves only recommend finishing to the 3k stone for most general cutting tasks while the 5k and 10 are for specialty sharpening tasks like sushi knives and swords.

You should consider the 400 and 800 chosera stones to use with your existing 3k stone, it would take away a lot of the confusion and probably give you better results.

The 3k chosera would be like a 1200 EP stone, the EP stones are rated in FEPA-F while the Chosera stones are rated in the old JIS so, the numbers will never makes sense comparing the two. You could use the EP120 with the Chosera stones and probably eliminate some stones in your progression.

I did look there and it pretty well conflicts with everything else published, which is why i was asking here. Thanks Jason, That's a time saver for sure.
