If you are not going to try making any of these knives yourself, I would suggest having a maker (or makers) do custom prototypes for you. The investment required for any manufacturer to mass produce any product, particularly one with tight quality control, is substantial. Paying a designer who has no marquee value is just extra overhead. They certainly aren't going to develop a proto for anyone when they are paying a staff of their own people to design knives.
Don't take this wrong, but why would a company or maker spend all of that money on a production facility, CAD/CAM, etc., and then use an undeveloped outside design, when there are any number of established knife makers/designers who would love to draw the royalties for the use of their names? If a manufacturer is going to collaborate with an outsider, it will most likely be a person with a recognizable name, which will draw buyers.
Until you have more invested in the design than a drawing and your best effort, I doubt that you will have much luck in getting a production run done. Like I said - get prototypes made, and at least you will have shown the commitment required to take your designs from paper to steel.
