Help stripping / removing coat on esee knives ?

Hey all, can anyone tell me if paint stripper will blunt the cutting edge on my esee4 ? Is it possible to get a nice polished finish on the blade using sandpaper?
I was going to use stripper first then sand after. What's the best technique if I want to leave the coating intact on the handle?
 
Not to any great degree if at all. The thing is, stuff like Zip Strip works so quickly that it's not on there very long. It would be stuff like etchant that would eat that edge up. Etchant is an acid. Strippers are usualls some kind of nasty, caustic base like lye.
 
You're more likely to dull the blade in the sanding process. I'm not sure stripper will even dull it at all. For my Izula 2 I just used sandpaper from the get go. It takes longer but it's easier to control where the coating is taken off. And yes, my izzy has a mirror polished edge. 1095 polishes up pretty nicely.
