the guy using it is at 0:30 seconds and from then on until 1:10 japanese knife clearly but who makes it :/

from the rustic look & tip profile it could be a Butakiri

the more likely style is a Kako Deba.
Since Deba's are the traditional knife style for breaking down & filleting fish.

went back & watched a couple more times, leaning away from the Deba now, the tip is not right for a deba

I got slapped down on another forum for suggesting it was a butakiri. They said that was a pork cutting knife and the one in the video was some other forum of very expensive Japanese fish processing knife that they just happened to sell.

The Japanese word for pig is buta, so a butakiri is a pig knife. It maybe the Japanese version of a western bullnose butcher's knife. The one in the video has the tip section of a Katsuo.
