Been trying to find a thread somewhere that gives opinions on what grit makers generally finish their damascus blades to before etching, but no luck. Seems like I read somewhere that a mirror polish doesn't turn out very well, but not even sure. What do you guys do?

Wild, Welcome to shop talk. I always sand to about 1000 grit but 600 is fine enough. Just be sure there are no scratches left, they will only get deeper. Also be sure to clean sanded blade with alcahol to remove oils before dipping in the acid. A nice slow diluted etch and sand with 600-1000 paper in between etches give me the best results.
