Help with identification and history.

Howdy y’all. I can tell much about these cleavers as far as the names of the manufacturers. I was hoping that y’all might be able to assist me? The first set is from a cleaver that came into the shop today. It appears that the name is Briar Edge but I am not sure. The second cleaver is a little smaller but I feel that it is older due to the way it was made. Any way, y’all take a look and see what y’all think. I have gotten nowhere on either one of them. Thank you in advance for any and all information.

Well, I tried to post pics but it is not letting me. So, I will try to describe them. The first one looks like it reads Briar Edge then the next line is a word I can not read and the last word that can be read is Works.
The older smaller one does not appear to be a full tang, has a copper or brass ring around the circular handle on the end that is closest to the cleaver. It is also pinned to the tang but the tang stops, or appears to stop, about two inches into the hardwood handle. On the blade itself, it reads, John Stor(T)Z and Son next line reads, Philadelphia PA. There is a logo of crossed swords facing down towards the edge of the blade. I see no other words on this blade. The (T) in the surname may not be a T and that is why I have it in Parentheses! Again, any information would me extremely helpful. Sorry I could not post photos.
