I've been neglecting learning how to properly sharpen my knives for a while now. I'm terrible with a normal stone. I was wondering what the best, and easiest to use sharpening systems are. I realize it's a matter of opinion, but I'd like to hear a few, if not more. I really need help in this area.

I would search, this topic comes up at least twice a week. The search button is on the top below the vBulletin banner and forum tree (the window that shows which forum you are in. ie BladeForums.com:... > General Knife Discussion > Blade... hopefuly you get the idea)

Also, the stock answer around here is sharpmaker, and it is basically correct, especially if you have trouble with benchstones. The only other option is Edge Pro which costs 3 times as much.

As I said, the search will reveal more info.

Brother Buckeye,

Don't fool around, just save your money and when you can afford it, purchase the Edge Pro Apex and you'll never be sorry. I've tried most systems and this I like the most.

www.bronksknifeworks.com has it at a pretty fair price. Get the system with the 4 stones and one polishing tape. Its all you'll ever need.

It can but it doesn't have to. Most scratches come from slurry that builds up on the blade and gets trasnferred to the platform. With a little care and some rinsing you can prevent most if not all scratches. If you want to be 100% safe you can just tape the sides of the blades.

Tim 8557, does the Edge Pro scratch the side of the blade, etc.?

I agree with Cliff in that if you are careful to wipe off the slurry and keep things clean, the blade shouldn't scratch. On the other hand, in the "Razor Edge Book of Sharpening" (which some think is the Bible of Sharpening), the author asks (I paraphrase), "do you want a pretty knife, or a razor sharp knife?"

I'll admit, that as I've become more adept at using my Edge Pro....the scratches on the blade are becoming pretty minimal.

Cliff is right... you get some buildup on the 'table' especially with the coarsest stone.

I got in the habit of just making a quick swipe with a towel when I switch sides.... on the finer stones it's not as necessary. Seemed to solve the problem.
