So, I was looking at a sale ad on this site for a Zwilling J.A. Henckels Pro Chef's knife for $89. Does it have the same steel as the Henckels 4-star and 5-star knives?
They use the same stainless steel "Precision-forged FRIDOUR" - it's their proprietary blend. Pro "S", Pro, Four-Star, and Four-Star II differ from one another in three areas:
Bolster - Pro is the only line with a curved half-bolster. The rest are full-bolster.
Tang - Both the Pro "S" and Pro are full-tang whereas Four-Star & Four-Star II are 3/4 tang.
Handle - Both Pro "S" and Pro have ABS handles where as the Four-Star & II are Polypropylene.
