I wouldn't know about chisels, but for the most part the sharp is all that matters...

Yes, but not all the time, depends on the angle.
If you refer to “urasaki” that is different as that its basically for food knives, in swords is not the same.

I know they have less resistance, and in my knives,, makes them way lighter, I have said it before, I like them cause they are sharp as hell, and carry light, but man that's why I make both, I have 7 knives in the oven set to fire at 0430 tommorrow, 6 are double ground convex
 
I LOVE chisel grinds.That's one of the reasons I'm into Emersons.
