I had your knives tested for hardness since I had the handles off, you can see the results. I then tested them after I did some grinding on them and the SHBM was 45.6 RC, the Mean Street was 44.7 RC and the Culti was 47.2 RC. Well, I guess you will have some nice butter knives when I'm done re-handling them!

yes, but I use super chunk skippy, which is really nasty stuff, I have seen lesser knives chip on that stuff while spreading.
