High carbon damascus or stainless?

I plan on ordering a new Sebenza with a damascus blade. This knife will be carried and used. Is it smarter to get the high carbon damascus then for a better cutting edge? Or will it rust the second it encounters moisture? I live in Phoenix, AZ so it's pretty dry here, but I'm sure it will be used on something wet eventually.

I have Mnandis and Sebenzas with high carbon damascus blades and stainless damascus blades.
I've not used high carbon damascus blades very often but I handle them relatively often. No hint of rust.
I'm the South S.F. Bay Area. I don't have rust problems with my other tools sensitive to rust. I'd guess Phoenix
is even dryer than we are.
