I'm in the market for a SAK, but I'm looking for something with exotic or high-end materials ( I mean, for a SAK ) - or perhaps one with unique or interesting features / aesthetics.

I know basically nothing about that whole market. Really almost literally nothing. I do know that I'm not super interested in mystery steel or 400 series steels (unless it's 440C or 440V). What's out there, aside from customized productions?

You should look at Swissbianco. They even have their own subforum here! They do a lot of limited production Alox, and occasional damascus blades.

Maybe take a look at traditional scout patterns which is basically what the soldier model is as well as the farmer, only with a saw. I'm personally going to jump at the chance if GEC ever produces one.

+1, SwissBianco has some of the nicests SAKs you will find anywhere. StickToDrum has a couple videos on youtube about them as well. Here's a link to his channel, http://m.youtube.com/user/sticktodrum if you look in the survice offered section there's a gent, who's name currently escapes me, that makes custom SAKs. Sticky has some videos on those as well.

Years ago Wenger and Buck marketed a line of "Swissbuck" knives. They are commonly found up for auction.

Wenger has a modern-looking Blackout series. I think they are overpriced, but maybe just what you're looking for?

Have you seen the Blaze Orange handles from Wenger?

This is one of my favorites:
