Hi,

I am looking for purchasing a couple of Japanese knives:
- Guyoto (Chef Knife) Edge 70/30
- Petty knife (10-12cm/3,9'-4,7') Edge 70/30
- Chinese Style Cleaver (preferably for both meats and vegetables, but just vegetables work just as fine) Edge does not matter, I assume that 50/50 is the most common one.

For me it is important that the knife is of very high quality but it as just as important that it looks very good. Here are two different knife brands to give you an idea of the design I am looking for:

www.chuboknives.com/products/takeda-stainless-aogami-super-gyutou-210mm-8-2#.VFteTfnF940

My requirements:
- Not too hard to sharpen, I am currently learning and I strive to get very good at it ASAP.
- Preferably traditional style, handles etc. but not necessary.
- Good balance, rather heavier than lighter.
- Stain resistant or stainless (not carbon so that I need to oil it after every use)
- Right handed
- Very high quality

BUDGET: around 400 USD per knife but if I find the right one I have no problem paying up to 800 USD.

I appreciate any help in can get in finding the knives I am looking for!
